Brussels Sprouts and Mint?!

My Little (we were matched by Big Brothers, Big Sisters - I'm the Big, she's the Little) is a 15-year-old vegetarian. As we're trying to get to know each other, one of things we're doing is Zoom cooking. This week we made Busiate with Brussels Sprouts, Mint and Two Cheeses, a recipe she picked. I frankly expected it to not be good. Instead, it was delicious! Bright flavors, a little heat, very satisfying.


Couldn't be simpler. (However, there's a typo in recipe. Says to use 2 cups of pasta water to make sauce. I used ¾ c. and that seemed about right.)
